Dreaming of a white Christmas...

These past few months have been quite eventful for the Chai Family! We've been back and forth from Baltimore to San Ramon so many times I'm sure Southwest flight attendants recognize us now. Gina and Josh welcomed Kylie Grace Harris on 10/10/10 and she's been so much fun to spend time with.


Bryan and I were lucky enough to spend a couple of days to ourselves in San Diego while he was there for a conference. I definitely wouldn't mind retiring there! The weather was a balmy 68F most of the time we were there...enjoyed some awesome Mexican food and after a short stop to L.A. to visit the Campbell's we headed up the coast on PCH (Hwy. 1) to get to Monterey.

Thanksgiving was fun - definitely stuffed ourselves silly. Then spent the rest of the night driving to Vegas!! Can't wait to head back to California for more Christmas mayhem! Until then have a Happy Holiday!!

Is it 2011 yet?

I've been a bad blogger. Shame on me. Didn't even realize how busy things had gotten until I looked at the blog and saw that I hadn't posted anything since August! (Not that anyone has been on the edge of their seats waiting for posts). 

Ok so September recap: hit the ground running after whirlwind baby shower and wedding reception. Helped out with another baby shower for cousin Bethany who's expecting a little girl in early 2011. (See pics below, she's so gorgeous pregnant). 


October rolls around and surprise! We're an Aunt and Uncle. Baby Kylie Grace Harris was born on 10/10/10 =) See pics from a recent photoshoot we staged below. We went back to CA for a wedding (Mr. and Mrs. Paul ! - also pics of that below LOL) and to see the newest addition to our ever-expanding family. The weekend was a whirlwind of wedding festivities and bottle feedings but we are so happy with everything going on right now! Everytime we go back to CA we find it harder to leave! Seeing all of our family and friends make us realize how much we love being there, hopefully we find ourselves back there sooner than later. 


Now that the weather has gotten a bit colder Bryan and I find ourselves craving some serious comfort food...good thing he bought me my new KitchenAid Stand Mixer!!! I've been dying for one and was too silly to register for it for our wedding...so Bryan obliged me by getting me one as an early Christmas gift! Its beautiful...really it is. I've already baked enough baguettes and cinnamon buns to feed an army. 


That's everything pretty much up to date so far. I will be playing around with mobile posts pretty soon, so hopefully I can update more often!!

Busy Summer

Sorry I haven't posted anything recently....I just realized the past few weeks we have just been trying to survive this east coast heat wave! Almost everyday the weather has been in the 90s+ with humidity. This just makes it unbearable to do anything during the day - groceries, dog walks, thinking...anything. Fortunately we've been pretty busy with school and work recently so that has kept us indoors and air conditioned!

We have also been insanely busy since the 4th of July - that includes baby showers, weddings, school and work! Can't believe that the summer is almost over and that time has just flown by without us even realizing it. 
Luckily we've both received good news - we both will be graduating on time! Which is such a relief because I really thought we'd be in school forever. (Along with the rest of our families).

Unfortunately I don't have many pictures to post - haven't had time to pick up the camera and really chronicle our summer like I hoped I could...maybe now that I have some time off between quarters I will definitely try to post some pics.

The 4th

Last weekend was my birthday (on Friday) and we decided to kill two birds with one stone by celebrating my birthday and taking Nabeela sightseeing in NYC. Literally its one of our favorite cities in the world - and I know a lot of people say that, but there is so much to love about New York! We decided to make a day trip out of it since we knew that we'd be busy the rest of the weekend with the 4th of July - driving up was a breeze considering that it was a holiday weekend - we made up in time to head over to Battery Park to see the Statue of Liberty before for our brunch reservations at my favorite brunch spot ever...Cookshop (just thinking about it makes me happy). After a delicious breakfast we wandered around Chelsea - picked Napoleon up some treats at the best dog store The Barking Zoo and eventually headed over to SoHo. Nabeela lost her mind at Uniqlo - and we spent the rest of the afternoon browsing all the shops. We did make it to Rice to Riches which provided quite a gluttonous afternoon snack of rice pudding =) - afterward we  headed to Times Square - which was a bit packed and a little difficult to navigate with all the tourists and the German soccer fans! Finally we settled in to dinner in Koreatown (as per Nabeela's request) and had some delicious bibimbap and kimchee. All in all it was a successful jaunt to NYC and we always love our little day trips there!

July 4th was a great afternoon and evening spent with the Young Family (Uncle David, Aunt Karen and Kyle) stuffing our faces with fresh, delicious Maryland blue crab! A perfect way to give Nabeela the true Marylander experience! It was an amazing and super busy weekend (which we are still recovering from).

So far these past few weeks I've been really into jamming and pickling. I think a lot of that has to do with the fact that the farmers market is overrun with the fresh fruit and veggies for the summer. All I do is buy giant baskets of everything! And I have so much leftover I figured I should preserve some of it.... I wanted to share the recipes I used for making fresh peach preserves (which I also used to make strawberry preserves as well). These preserves go well on anything - but particularly fresh baked scones (see the best recipe in the world below)...mmmm. P.S. The scones freeze and bake beautifully so you can always have fresh scones at hand - which the carb loving beast inside of me loves.

Peach (or any other fresh fruit you have on hand) Preserves Recipe
~3-4 lbs. sliced peaches (skin and seed removed - skins can be removed by boiling peaches for a few minutes then letting them cool and peeling)
Dash of nutmeg or cinnamon ( I used both)
2 cups of sugar
Juice of 1 lemon

Method:

1. Pre-prepare canning jars by boiling everything in water for about 10 minutes. Remove and allow to air dry. Place a small plate in the freezer. 
2. Start by slicing the peaches into a bowl and adding a couple tablespoons of the sugar. Mix and allow to sit for a couple of hours (or overnight) to release juices. 
3. When peaches are ready, heat a large pan (med-high) and add the peaches, the remaining sugar, lemon juice and nutmeg/cinnamon. Bring this to a boil and allow to simmer for approximately 25-30 minutes or until mixture is reduced and syrupy. You can check the consistency of the preserve by putting a small amount on the plate in the freezer - once its cooled you can see if the preserve gels to a consistency you like. 
4. When the preserve is reduced and you have tested its consistency, add it to the pre-prepared jars up until about 1/4inch from the top of the jar. 
5. Put the lids on and place the jars back into the boiling pot of water for approximately 10-15 minutes. After you take these out, leave them at room temperature until mostly cooled and you can store these in your fridge or at room temperature in a cupboard.

Strawberry (or any other berry) Scones (recipe retrieved from: An Edible Symphony)

1 cup strawberries, chopped up
3 tbsp granulated sugar
2 cups all-purpose flour
2 tsp baking powder
1/4 tsp salt
6 tbsp unsalted butter, in cubes, slightly softened
2/3 cup cream or cold buttermilk

Method:
1. Preheat oven to 400 F. Line a baking sheet with parchment paper.
2. Sprinkle fruit with 1/2 tbsp sugar and set aside. Combine remaining sugar with flour, baking powder and salt. Add butter to the mixture and cut it in using a pastry cutter or two knives.
3. Stir in the fruit, then add the cream/buttermilk. Use rubber spatula to gently stir dough and bring it all together.
4. Turn it onto a floured surface and knead a few times to incorporate everything. Sprinkle more dough on if it gets sticky. Do NOT overwork it though!
5. Pat the dough into a circle that's 3/4 inch thick. Cut circle into 6-8 wedges, then transfer to cookie sheet. At this point, you can freeze the scones on the sheet, then store them in a ziploc bag in the freezer. Or bake them right away for about 15-20 mins, sprinkled with extra sugar on top, till golden. Eat warm, schmeared with honey or butter or both!

Birthdays and Backsplashes

These past few weeks have been a whirlwind! First we decided," Wouldn't it be a great idea to put up our own backsplash? I mean they make it look so easy on HGTV?!?!" Well I can't say it wasn't a success (as you can see from the pictures below) but it was definitely not a walk in the park. Putting up the tiles seemed easy enough, but grouting was possibly on of the worst ways to spend a weekend....ever. Grouting is, I realized, one of those character building experiences that separates the men from the boys - fortunately Bryan has way more patience than I do for things like that, so after about 25 minutes of smushing grout between glass tiles - I relinquished and he continued for another 4-6 hours! But his hard work paid off because the tile looks fantastic and really makes the kitchen stand out. Now putting in our own wood floors might be a little too overachieving - even by our standards. We'll have to wait out the summer and finish getting the grout out from under our fingernails before we can tackle that project.

Literally hours after we finished putting up the tile, Nabeela flew into BWI for a summer program at University of Maryland. It was SO wonderful to see her and I couldn't wait to share everything in Baltimore with her! Sunday morning we all went to the JFX Farmers Market and got Sunrise smoothies and fresh donuts for breakfast, along with summer squash, spring onions, beets, strawberries and of course tons'o'milk. Nabeela agreed that although 8am is a horrible time to wake up on a Sunday - the fresh donuts make it worth it!

Monday 6/21 found all of us celebrating Bryan's 25th birthday! We all met up with some neighbors at Mezze ( a Mediterranean tapas restaurant in Fell's Point) for some delicious food with some great people. Afterwards we found ourselves (as we almost always do) inhaling copious amounts of gelato at Pitango - the best gelato place in the world. It was a nice night and Bryan definitely enjoyed himself (food+ice cream = happy).

After Bryan's birthday I dropped off Beba at UMD, which was a surreal experience because I remember my parents dropping me off at UCD my freshman year at the dorms. Beba was 8 (making Liya 5!) and the girls couldn't believe I'd be living there from that point on - my mom said they cried the whole car ride home. After dropping Beba off at her program I felt the same way - although she's only be there for 2 weeks - I joked at her "Am I obligated to cry the whole car ride home?" She laughed at me - probably thinking I was crazy - but I realized as I drove away how quickly she went from 8 and crying in the car to 16 and swiping into her dorms with her roommates. I was so proud of her and I know she was nervous but she handled everything like a champ, and she's having a great time!

July 4th weekend coming up and we (Bryan, Beba and I) are off to NYC! Beba's first time - well not technically she went there at 3mo. old - in the Big Apple! Pictures of us eating everything imaginable will be posted soon! Have a wonderful long weekend!

Southern Hospitality

This past weekend we drove our way down to visit our good friends the Chappell's and their newest addition Miss Saylie in Greenville, South Carolina! I must say the road trip down to the South was very interesting...upon crossing the state border into North Carolina we started seeing huge billboards for guns and fireworks...(fireworks were also being sold at a gas station - if I remember correctly the ad said "Fuel and Fireworks" - always a good combination...).

Chris and Jenny were amazing hosts, and Saylie was perfect entertainment. Bryan got to change some diapers - which he strangely enjoyed ( lets see how he feels after a couple of kids...) and I got to snuggle with the baby on the couch while we watched movies!

After resting for the day we headed out to the BMW Spartanburg Plant (the headquarters of BMW in the United States) for a tour of the factory -  courtesy of Chris who currently works there. Unfortunately we couldn't take pictures of the amazing machinery inside the miles of factory space (BMW is a little secretive about their new plans...also they had some cool prototypes hanging  around that they probably didn't want on blast on the internet).

Later we headed into downtown Greenville- which was really charming and totally reminded me of downtown Davis and the Arboretum!  We enjoyed pigging out at dinner and also on some gelato afterward... (Hazelnut Gelato is MONEY!)

A special thanks again to the Chappell's for hosting us again, they are wonderful friends and we love'em so much!!

I guess that's ends our summer trips for now, we really don't have anything big planned until our CA trip in July/Aug  - kind of a bummer since we love traveling so much.

We do have tons of summer projects going on right now...we are planning on installing a glass mosaic back-splash in the kitchen - I will post pics when its done! And hopefully after that we plan on tackling bamboo flooring... wish us luck! Hope everyone is enjoying the summer and warmer weather so far!

Impromptou Boston

Last week we decided to take a very spontaneous trip to Boston (we just couldn't wait to be in Martha's Vineyard). It was fun! We didn't tell anyone we were going to be there and we just hopped on a plane and spent two days and a night exploring good old Beantown. JetBlue had a crazy deal for $10 flights from Baltimore to Boston so we thought, "Why Not?"

Bryan has never been to Boston so we hit up all the tourist attractions, Faneuil Hall, Quincy Market, Harvard (Havaahd) & MIT.

MVY

We just returned from an amazing few days in Martha's Vineyard - a lovely, sleepy beach island off the coast of Cape Cod. We got really lucky with the weather conditions since it was a balmy 75F most of the time - according to the locals this time of year is usually chilly and rainy. We stayed at a lovely B&B called The Hob Knob Inn in Edgartown and we rode cruisers to the beaches almost everyday! The first day we got there we biked over the Chappaquidick Island - famous for the Ted Kennedy 'incident'  in the late 60s - and visited a Japanese Garden that is maintained by locals on the island, we also had lunch on the beach, which was beautiful and mostly deserted!

Day two consisted of a 3 hour kayak around Edgartown and into the estuary where we saw tons of wildlife and were treated to some beautiful views of the island. Day three was a trip to Oak Bluffs and Vineyard Haven to walk around the towns and into all the local shops - we also feasted on some amazing fresh calamari and mussels.

Day Four was a wonderful morning spent in Aquinnah and Menemsha admiring the lighthouses and coastal scenery, we drove back to the hotel for the afternoon and then biked a few miles out to Katama Beach (it was a toasty 78F that day!). Finally we headed back to Menemsha, with a stop by the Menemsha Fish Market and picked up some smoked bluefish and two fresh caught lobsters. We toasted to two wonderful years of marriage on Menemsha Beach at sunset overlooking the Nantucket sound, with our toes in the sand !!

We are now perfectly relaxed and stuffed full of lobster (I'm not kidding we had lobster almost everyday - upon Bryan's insistence!).  It was so wonderful to spend  a weekend away together because we realized how much happier marriage has made both of us! Welcome

So why blogging?

I started to realize how impersonal social networking was becoming, and more importantly, it didn't provide any insight into the lives of others. All I could pretty much do was stalk friends on Facebook via pictures or comments and hope that they would return messages. Additionally, I was tired of having to do the perpetual 'catching up' conversation with anyone I hadn't spoke to in a while, so here is an effort to try and make ourselves more available and present to our families and friends who care about the goings-on in our lives (and not just our Facebook statuses). Here is a way to actively participate (or spectate) at the things we've been up to here in Maryland. I promise to post at least once a week and provide pictures or video as well. Happy blogging!
